桂皮的介紹及營養分析

桂皮是為樟科常綠喬木植物肉桂的干皮和粗枝皮,氣味芳香,作用與茴香相似,常用於烹調腥味較重的原料,也是五香粉的主要成分,是最早被人類食用的香料之一。主要產於廣東、廣西、浙江、安徽、湖北等地,以廣西產量大而質好。產地亦有採鮮桂葉作調味的。
桂皮分桶桂、厚肉桂、薄肉桂三種。桶桂為嫩桂樹的皮,質細、清潔、甜香、味正、呈土黃色,質量最好,可切碎做炒菜調味品;厚肉桂皮粗糙,味厚,皮色呈紫紅,燉肉用最佳;薄肉桂外皮微細,肉紋細、味薄、香味少,表皮髮灰色,里皮紅黃色,用途與厚肉桂相同。
桂心是肉桂中的一種,一般說,肉桂為桂樹的皮,乾燥後為桶狀,稱“桂通”,而你說的“桂心”系去掉外層粗皮的“桂通” ,也寫作“桂辛”,跟“肉桂”的療效近似。
營養分析
1、桂皮香氣馥郁,可使肉類菜餚祛腥解膩,令人食慾大增;
2、菜餚中適量添加桂皮,有助於預防或延緩因年老而引起的Ⅱ型糖尿病;
3、桂皮中含苯丙烯酸類化合物,對前列腺增生有治療作用。

紫米的營養價值

香幹的營養價值
香乾營養分析:

滑子菇的食療作用
補脾胃,益氣,主治食慾減退,少氣乏力。
花菇味甘,性平;
製作菜式:
滑子菇豆腐羹
調料:鹽、雞精、油、黃酒、麻油、水澱粉。
原料:豆腐、滑子菇、蝦仁、豌豆、胡蘿蔔、火腿、海鮮菇。
做法:
1、將滑子菇、切碎的海鮮菇及豌豆分別在開水中汆一下,撈出放入晾涼的水中;
2、蝦仁去砂線,用黃酒醃一下,胡蘿蔔、火腿切丁;
3、鍋內倒入少量的油,下各種配料翻炒,加鹽,少加一點水;
4、待水開的時候將豆腐放入,稍微燉一會,加雞精、加水澱粉勾薄欠,倒入少量的麻油炒勻即可出鍋。

肥牛的營養價值
肥牛是一種高密度食品, 美味而且營養豐富,不但提供豐富的蛋白質、鐵、鋅、鈣還是每天需要的維生素B群, 包括葉酸、維生素B和核黃素等的最佳來源。吃肥牛可以配合海鮮和青菜,海鮮中含有豐富的蛋白質、鐵、維生素,營養更豐富,更易於吸收。
一份肥牛中富含的B12=7份等量的雞胸肉中B12的含量。
一份肥牛中富含的鋅= 12份等量的TUNA魚中鋅的含量。

麥收隨筆
眨眼間又到麥收的季節,現在的麥收可真是輕鬆多了,聯合收割機“轟隆隆”的走上幾個來回,大片的麥田就都變成了麥粒儿。把麥粒儿裝進口袋裡然後用農用三輪車或拖拉機拉回家晾曬上三兩天后就可以入倉了,然後再用播種機種上玉米之後澆上一遍水就開始等著秋收了!想想看,現在的麥收真是簡單多了,省了農人們好多的力氣。這不由得讓我想起了少年時代麥收的情形。
那時候的麥收真的太艱難了,六月的陽光正是最毒辣的時候,然而太陽最毒的時候也恰恰是麥收最忙的時候;那個年代沒有聯合收割機,收麥子全靠人們用鐮刀割。因此在向麥田出發之前要把所用的鐮刀在磨石上“嚯嚯”的磨光、磨快了,然後還要準備下大量的稻草繩子以備捆紮麥秸所用;當然還要帶上足夠的水,在烈日下割麥子是一項非常艱辛的體力活兒,出大量的汗沒有水怎麼能行?
來到地頭,俯下身子,左手抓住一把麥穗下方的秸稈,右手揮舞鐮刀將秸稈齊根砍斷,然後整齊的鋪放在地上;接著再抓一把麥秸稈揮鐮再砍,如此循環往復。用不了五分鐘整個後背前心便已被汗水浸透。一望無際的麥田就如同海洋一般,農民們就是靠一鐮刀一鐮刀把麥子放倒的。麥芒劃在手背、胳膊上形成了一道道的血痕,被汗水一浸那感覺非親身經歷者無法感悟。我親身經歷過,因此我更能體會農人的艱辛,“誰知盤中餐,粒粒結辛苦”一點不假!
當把全部的麥子都放倒平鋪在地上後,經過一個上午或下午的晾曬就開始捆綁了。先在腰里系上很多的草繩,然後用鐮刀將鋪在地上的麥秸聚攏成一小堆一小堆的;接下來從腰里抽出繩子將那小堆麥子捆成個兒。等這項工作完成後就開始裝車了,那個年代裡沒有機動車,只有人力木板車。把車裝滿後先在車轅上栓根繩子,一個人駕轅另一個人就拽那根繩子幫忙,遇到上坡的時候兩個人的前胸幾乎都貼著地了,行進之艱難可見一斑!這種情形像極了拉船的縴夫。
不知用了多少個來回終於把麥田裡的麥子運到了場院裡,堆成了高高的小山。下一步便開始用脫粒機脫粒儿了!脫粒儿時要分工明確,有的專門負責解繩子,有的負責把麥秸放進脫粒機裡,有的負責收集麥子粒儿,有的則負責收集碎秸稈。經過一天或一夜甚至更長的時間,場院里便堆成了小山一樣高的麥粒!這時候人們開始互相比較,看看誰家的“小山”更高更大,經過比較有的搖頭嘆氣有的笑逐顏開,現在想來似乎也挺有意思的。
接下來是晾曬,至少要在烈日下暴晒至少三天的時間才不會生蟲子,在晾曬的過程中要一遍遍的用鐵耙子或竹耙子將麥粒攤勻。當麥粒咬在嘴裡發出“咯嘣”的響聲時說明麥粒已經曬到火候可以入倉了。事先要把家裡空的大缸大甕準備上十幾甚至是幾十個以備存麥粒用。收麥粒是一件非常痛苦的事情,因為越是太陽毒的時候越是入倉的黃金時間,一般下午四點多鐘就要開始行動了!聽吧,公路上、房頂上叮叮噹當用鐵鍬、耙子堆麥子的聲音此起彼伏。把麥子堆成堆後,一人張開口袋,另一人開始用簸箕或鐵鍬把麥粒倒進口袋裡;一口袋麥粒大約一百餘斤重,把一個個口袋裝滿後再運回家倒入空缸中,然後用塑料薄膜把口封好以防返潮或蟲咬。
當然麥子入倉了並不代表大忙季節就已經結束了,因為還有夏種呢!那個時候沒有播種機全用人力。一個人用鐵镢一行行的挖成小坑,另一個人端著盛滿了化肥的盆子往小坑里撒化肥;還有一人端著盛滿玉米種子的盆子跟在後面,一個小坑里大約要放入二到三粒玉米種,放上玉米種子後還要用腳把土將坑埋住。等這項艱鉅的工作結束後還要澆上一遍水以保證土壤的墒情,還要背著噴霧器打滅草劑。等到所有的工作都結束了,整個麥收季節也宣告完成了。
整個這一系列程序下來至少要持續半個月甚至更長的時間。我用筆去描述這個過程當然很輕鬆但是真正要幹起來不知要付出農民多少的汗水?當然了現在農村都已經基本實現機械化了,但機械化並不代表現代化,在夏收夏種的過程中某些環節上仍然需要人力來完成。因此可以這樣說農民仍然是中國最痛苦的職業!

石鍋拌飯
適合的才是養生的。石鍋拌飯
書市、網絡、電視狂刮一陣“養生”風,如此全民教育的影響力果不容小覷,“養生之道”廣為流傳紛紛效仿,直至社會顯現出負面現象,才得以權威機構出來闢謠。這期間的誤導,究竟該誰為老百姓的健康買單?
養,即調養。生,即生命。科學養生可健康精神、延年益壽,一眾養生學說,人云亦云,惟做到健康飲食、適宜運動、平和心態,方能“盡終其天年,度百歲乃去”。
韓式拌飯,一貫的簡單烹飪,葷素配搭不失營養,將飯餚混在同一口腔裡咀嚼,談不上是美饌,卻甘願做這樣一個“飯桶”。

原料:
米飯300克、牛肉50克、洋蔥1/2只、胡蘿蔔60克、捲心菜100克、雞蛋2只、海苔2片、辣椒醬20克、白糖少許、鹽少許、芝麻香油適量。
做法:
1、將米飯按煮飯程序煮好;
2、牛肉切絲,用米酒、醬油和鹽抓一下;
3、洋蔥切絲、胡蘿蔔切絲、捲心菜切絲;
4、雞蛋打散攤成蛋餅後切絲;
5、胡蘿蔔絲用攤蛋餅的鍋煸炒至軟;
6、起鍋後再爆香洋蔥絲,放入牛肉煸炒變色起鍋;
7、捲心菜放入加了鹽熱水焯一下過涼;
8、平底鍋內倒少許香油,放入辣椒醬和白糖炒化,冷卻待用;
9、石鍋內壁均勻塗上芝麻油,將米飯舀入,壓實;
10、分別鋪上五種絲後用小火烘至米飯出現鍋巴;
11、兜底拌勻後食用。

Tips:
1、煮米飯時要注意水量,太硬或者太軟的飯影響拌飯口感。
2、蔬菜的種類可以按個人的喜好自由搭配。
3、牛肉如果用肥牛的話應該會更好。
4、辣椒醬加白糖用香油炒過後口味更佳。
5、石鍋內壁塗上香油後,才能烘出鍋巴來。

說好了,每年桃花盛開的季節,我們去看那雨中的桃花。
可窗外的下雨淅淅瀝瀝下了一個漫長的相思季,你怎么還不來?
難道你想讓我一個人獨自守候你遙遙無期的承諾,讓我空望這雨打桃花的悲涼。
窗外垂落了條條雨絲.......

培根XO醬炒蘿蔔糕
Bacon培根,做法很多。此前曾做過培根披薩與培根金針菇卷,是經典吃法。由愛拿它炒飯,風味獨特。加入XO醬,炒軟糯的蘿蔔糕,更有一番滋味。且做起來都非常簡單省事。
培根XO醬炒蘿蔔糕

原料:
培根3片、蘿蔔糕十幾塊(小塊)、XO醬適量、青蒜調味。
做法:
1、鍋裡熱少許油,放入蘿蔔糕小火煎至兩面金黃。先盛出備用;

三下擠壓餃子法
餡料的原料:
羊肉(浸泡後)550克、白蘿蔔630克、蔥90克、姜28克、花椒7克。
調料:
花生油四湯匙、香油一湯匙,鹽三茶匙、生抽兩湯匙、料酒2湯匙、味精茶匙、花椒水200克。

餡料的製作方法:
1、白蘿蔔擦成絲,然後剁碎;(圖2、3)
2、浸去血水的羊肉剁成肉末(圖4);
3、把白蘿蔔碎和羊肉末一起剁成泥狀(圖5、6);
4、花椒用開水浸泡15分鐘,取泡好的花椒水,帶皮姜剁碎,蔥切碎備用(圖7、8);
5、把剁好的餡料加上蔥薑末,添加花生油和香油,添加料酒、鹽、味精還有少量時間生抽,然後用筷子沿一個方向攪動,並慢慢分次添加花椒水,直至花椒水全部被肉餡吸收

羊肉水餃無羶味、味道鮮美的小竅門:
1、羊肉先用清水浸泡20分鐘,洗去血水;
2、添加帶皮生薑,因為薑皮辛涼,有散火除熱、止痛祛風濕的作用,與羊肉同食還能去掉羶味;
3、花椒水去羶味是最重要的,可以在剁肉的時候分次添加,也可在攪拌肉餡時分次添加;
4、肉餡添加足夠的水,羊肉口感才會鮮嫩,餃子的湯汁才會豐富。白蘿蔔的水分大,我用的白蘿蔔量足夠大,還有200克的花椒水,所以無需再添加水;
5、羊肉性溫熱,常吃容易上火。而羊肉和蘿蔔搭配在一起,則能充分發揮蘿蔔性涼,可消積滯、化痰熱的作用;
6、料酒和香油的添加必不可少,可以起到去腥提香增鮮的作用。
重點介紹一下咱家傳的三下擠捏餃子的包法:
1、取餡料攤在餃子皮中央(這個步驟誰家都是一樣的哈);
2、第一步:左手持攤了餡的皮,右手對折餃子皮,並在中間捏一下;
3、第二部:左手拇指和食指一起擠壓捏緊餃子的左邊;
4、第三步:右手的拇指和食指用同樣的手法,以左手的食指和中指為依托,擠壓捏緊餃子的另一邊。

火腿+蜜豆早餐包
原料:
高筋麵粉190克、全麥粉60克、糖槳20克、細砂糖10克、全蛋液50克(35克加入麵團中,15留作最後刷在麵包表層上)、牛奶130克、幹酵母3克、鹽2克、無鹽黃油20克、火腿腸3根、蜜豌豆適量。

做法:
第一次與第二次發酵:
1、將除了黃油、蛋液、葡萄乾以外的全部材料放入容器內拌勻,一邊緩緩加入牛奶一邊用筷子攪拌使其成大雪片狀;
2、將麵團揉出筋(撐開能有薄膜)、表面光滑,加入黃油揉均;
3、將麵團放在容器中,蓋上濕布,置於溫暖濕潤處進行第一次發酵(我一般會放在烤箱中層,在下層放盤水,然後將烤箱設置成下火30度);
4、發酵結束後,麵團會呈原先兩倍大,用手指頭按下去不會回彈;
5、用雙手輕壓發酵完成後的麵團,使氣體排出;
6、然後切分成70克一個,滾圓,蓋上濕布進行第二個發酵,約15分鐘;
7、將二次發酵完的麵團分別用手輕擠出氣體。

整形、最後發酵及烤製。
1、取3個麵團,分別擀成牛舌狀;
2、在每個中間放入一根火腿腸;
3、包合捏緊,放入烤盤中蓋上濕布,置於溫暖濕潤處進行最後一次發酵,約35分鐘。與此同時,為了防止剩下的麵團發酵過度,先將其放入冰箱冷藏;
4、在發酵完的火腿麵包坯上刷上蛋液;
5、點綴芝麻;
6、將麵包坯放入預熱好的烤箱中,中層,上下火,180度,烤20分鐘至表面金黃即可;
7、在第6步的同時,從冰箱中拿出剩餘的麵團,分別擀成圓形,放入適量的蜜豌豆;
8、包合,重複第3步至第6步的動作即可。

九寨溝湖泊中的精粹
五彩池池以秀美多彩,純潔透明聞名於天下,面積5645平方米。海拔2995米,寒冬地凍三尺,而池水依然清波蕩漾,四季雨旱交替,而池水似無增減。五彩池距涪源橋4166米,池群面積2.1萬平方米,有彩池693個,是黃龍溝內最大的一個彩池群。池群由於池堤低矮,汪汪池水漫溢,遠看去塊塊彩池宛如片片碧色玉盤,蔚為奇觀。“玉盤”在陽光的照射下或紅或紫,濃淡各異,色彩繽紛,極盡美麗嬌艷。隆冬季節,整個黃龍玉樹瓊花,一片冰瀑雪海,惟有這群海拔最高的彩池依然碧藍如玉,彷彿仙人撒落在群山之中的翡翠,詭譎奇幻,被譽為“黃龍”的眼睛,是黃龍溝景區的精華所在。
